Avocado Salsa Verde
I love Green Salsas that have a bit of a kick, and I particularly love a Salsa Verde made with silky smooth Avocado. This particular Salsa Verde also has one secret ingredient that many gardeners will have plenty of all through the growing season, and especially at the end. That secret ingredient is Green Tomatoes. Adding one small green tomato to your salsa, along with avocado, tomatillo and your other ingredients adds a certain mysterious flavor that most folks can’t quite identify, but know there is something special.
This Salsa Verde recipe is simple and quick, and requires no cooking or roasting. It’s the best of fresh summer foods.

Avocado Salsa Verde Recipe
Ingredients
5-7 large green Tomatillos
5 or so green chile Serranos or Jalapeños (I prefer Serrano flavor, but any will work)
1 Green Unripe Tomato
1/2 ripe Avocado (use whole avocado if small or you want extra avocado creaminess)
1 clove Garlic
1 handful of Cilantro
1 tsp fresh lime juice
salt to taste
water to adjust thickness of the salsa.
Take all ingredients and add to a 1 quart wide mouth mason jar, blend with a stick blender, and add salt to taste, and add water if you need to thin the salsa. If you don’t have stick blender, then a food processor or a normal blender will work also. Mortar and Pestle is great if you prefer more chunky salsa, and have the fortitude.
A variation on this recipe would be to take the ingredients, and roast them before hand on the grill or under the broiler of your oven, or over a gas burner. The flavors will be completely different, and more mellow. But, there will still be a great tanginess due to the Tomatillo.
